But milk from the village MUST be boiled. Steamed “raw” product, of course, has a pleasant taste, which many like, want to drink and drink, but it can be dangerous for your health. The fact is that milk directly from the cow contains various bacteria and microbes (staphylococci, salmonella, Escherichia coli, etc.). They get into the milk from cattle, from the milkmaid, through the dishes in which they were milked and which were used for transfusion, from any external conditions. Even if you know the owner and his cow well, there are no guarantees in the purity of the milk.

  2. Pour cold milk into the pan. Do not pour to the top, but leave 2-3 cm to the edges. This interval takes into account that during the heating process, the milk rises slowly even before it boils.
  3. Turn on medium or low heat and wait. It is absolutely impossible to cover the pan with a lid.
  4. In the process of heating, periodically stir the milk, breaking the formed film.
  5. As soon as the milk rises sharply, begins to boil, remove the pan from the stove or turn off the heat, if the stove is gas.
  6. Cover the pan with a lid and leave to cool.
  7. Put the cooled pan of milk in the refrigerator. If you want to pour it into another dish, be sure to sterilize it first, for example, by holding it over steam or in a steamer.
