Raw mushrooms are popular mushrooms that, despite the name, are not eaten raw. But they can be collected and stockpiled. They are rich in protein, vitamins and trace elements, and also contain only 12 kcal per 100 grams. How long can you store raw mushrooms :

  • Immediately after collection in raw form, they can stand for 1 day in a cool place.
  • Frozen mushrooms can be stored for up to 1 year.
  • Salted and marinated rusks are also stored for up to 12 months.

And now in more detail.

In fresh form

The first and most important rule is to collect mushrooms only in dry weather. After rain, they are saturated with moisture and quickly become wormy.

Collected mushrooms should be put out of the basket and sorted. Remove worms: if there are characteristic points on the stem, these are traces of worms inside the mushroom.

Mushrooms should be stored raw for no longer than a day in a dry, dark place at a temperature not higher than 10 °C. To do this, you can take them to the cellar, put them on the balcony or in the refrigerator overnight.

Important ! Mushrooms cannot be washed or cut before storage, they must be clean and dry. You can remove only leaves and branches that got out of the forest.

How to store raw vegetables

In the fridge

In the refrigerator, raw rusks can be stored in a basket for vegetables, in a plastic container, covering the top with a bag. The storage period is up to 5 days at a temperature not higher than 5 °C. Remember that over time, the cut of the mushroom darkens and becomes brittle, which makes further processing difficult.

If there are a lot of mushrooms and all of them do not fit in the basket, you can put them in plastic containers and put them on the bottom shelf.

For the winter

The taste and aroma of these forest mushrooms only gets better after heat treatment, so mushroom pickers are happy to collect them for homemade preparations. The storage of raw corn can be ensured in the following ways:

  • freeze boiled food;
  • to dry;
  • cook salted and pickled.

How to freeze

The easiest way to prepare rusks for the winter is to boil them until ready and freeze them. They must be cleaned, washed, cut into pieces, boiled – they are brought to full readiness, and after that they can be frozen.

For this you need:

  1. put the cleaned mushrooms in a saucepan and pour water so that the mushrooms float freely in it;
  2. add salt, bay leaf, allspice and cloves;
  3. bring to a boil;
  4. reduce the heat and cook for 45 minutes;
  5. discard in a colander and drain.

When the mushrooms are completely cooled, package them in portions and send them to the freezer.

Store at a temperature of -18 °C and below for up to 1 year.

How to dry

Raw materials can be dried in two ways:

  • on a thread in a dry, well-ventilated place.

Mushrooms cannot be washed before drying, as they, like a sponge, absorb moisture. They need to be cleaned of impurities with a knife, cut into pieces, small ones should be left whole. You can dry the legs and hats separately.

String pieces or whole mushrooms on a thread, and hang them in a dry, well-ventilated place: on the balcony, in the attic, or in the kitchen. As soon as they lose moisture and become dry, but not brittle, carefully remove and store in a clean glass container in a dark, dry place.

The storage temperature is -18-20 °C, the shelf life of dry mushrooms is up to 1 year. It is best to put the jar in a kitchen cabinet or in a pantry.

To do this, unwashed, cleaned and prepared mushrooms need to be sorted by size. If there are several pallets in the dryer, place the largest pieces at the bottom.

It will be possible to properly dry rusks at a temperature of 35 °C, the time depends on the size. Check the readiness of the product every 30 minutes. The whole process will take 4-5 hours. Cool the finished mushrooms, pour into a dry glass jar with a lid, and store in a dry, dark place for up to 1 year.

How to salt

There are several ways of salting raw corns:

  • dry;
  • hot;
  • cold.

Regardless of the method of salting, mushrooms should only be stored in a cool place: a refrigerator or a cellar. There they will be suitable for use all winter.

Freezing such ready-made mushrooms will not spoil their taste, so ready-made salted raw mushrooms are frozen and stored in bags at a temperature of -18 °C and below for up to 1 year.

How to marinate

Before pickling, the mushrooms should be boiled for 30 minutes in salted water with spices, then add the marinade ingredients and roll them up in jars. Store in a dry, dark place at a temperature of 10-20 °C for up to 1 year in a cellar, basement, storeroom or on a glazed balcony.

After opening, you should keep the pickled rusks in a jar for no longer than 3 days in the refrigerator.
