It is difficult to say who came up with the first recipe for ice cream, since it happened a long time ago – as far back as 3,000 BC. And it was in China. It is known for certain that even then rich Chinese were served ice with pieces of fruit, berries and pomegranate seeds. Not only the ancient Chinese liked to treat themselves to a summer dessert, but also the ancient Greeks – frozen milk and wine were widely popular among the nobility. In the 11th century BC, the recipe for making and storing the first ice cream became available. But only in the 13th century AD, the famous traveler Marco Polo brought the ice cream recipe from China and shared it with Europeans. Milk ice cream has the shortest shelf life, at a temperature of -20 °C it can be stored:
- pressed without filler – 2 months;
- packaged without filler – 2.5 months;
- pressed with filler – 1.5 months;
- packaged with filler – 1 month.
Fruit and berry ice cream made on the basis of aromatic essences will be stored at a temperature of -20 °C:
- packaged – 1 month;
- pressed – 1.5 months.
The terms of storage of soft ice cream in the freezer are as follows:
- 15 minutes at a temperature of -15 °C;
- 30 minutes at a temperature of 12-14 °C;
- 60 minutes at a temperature of -10 °C;
- 4 hours at a temperature of -8 °C.
Fruit ice at a temperature of -20 °C will be stored for 3 months.
A few more factors affect the duration of ice cream storage:
- a temperature lower than -20 °C allows you to extend the shelf life of ice cream for a month and a half;
- the smaller the portion, the longer its shelf life;
- in most cases, the temperature regime of storage and conditions of transportation of ice cream are accompanied by gross violations, so you should not reach the last deadline, it is better to eat it as soon as possible;
- The shelf life of ice cream is also affected by the fat content of the product – the higher it is, the longer you can store this dessert.
In theory, you can’t store ice cream without a refrigerator, but in practice you can still try. After all, we are not talking about a full storage period, but about a few hours. Many have already managed to conduct an experiment and checked for themselves whether it is possible to save ice cream from melting in a thermos. And even today, a cooler bag has become very popular, which, together with cold batteries, allows you to keep any frozen product in the same condition for up to 6 hours.
In order for the ice cream in the thermos to melt within 5 hours, it is necessary to fill the entire thermos with it, literally tamp it in there so that there is no additional space. Another option is to fill the remaining space in the thermos with ice cubes together with the ice cream package. By the way, if the material from which the inner flask of the thermos is made is important for heat retention – metal or glass, then any thermos is suitable for frozen products. The main thing is to prevent direct sunlight from hitting it and to remember that in the best case, after 5 hours, the ice cream will be already soft and turn into a warm milkshake, which will turn sour in just a couple of hours.

Storing creamy, milk and fruit ice cream at home is a common thing. Few people think about the fact that the storage of ice cream in the refrigerator has a very limited period of time. And all because this dessert does not stay long in any house. However, you need to know about the nuances of ice cream storage, if only because during transportation from the store to home (especially in the heat), it melts significantly.
Up to 5 days – this is how long ice cream is stored in a plastic bucket, paper or polyethylene wrap, if the temperature in the freezer is kept at -12 °C. At the same time, it is necessary to close the lid of the bucket well or wrap the ice cream with cling film if it is already open.
It is worth paying special attention to showcases with ice cream, which is sold in portions. The storage period of such a mass is no more than 48 hours, at a temperature of -12-15 °C.
Homemade ice cream
The tastiest ice cream, of course, is homemade. Only natural ice cream, prepared with your own hands, cannot cause doubts about the quality and freshness.
Homemade ice cream can be stored for 3-4 months at a temperature of -12 °C to -18 °C.
Regardless of the container in which it was frozen, there should be no open areas, the surface of the container must be covered with cling film and the date of preparation must be indicated. You can buy special plastic or silicone molds to freeze the mixture immediately in portions, which is much more convenient and practical.
How to serve ice cream
In the frozen state, it is difficult to serve ice cream in such a way that it looks appetizing and effective. This is the right way to do it:
- cut off the required amount of ice cream from the briquette, immediately put the rest back in the freezer;
- put the ice cream in the microwave for a few seconds and bring it to the desired consistency;
- form balls using a special spoon and put them in a bowl;
- add fruits, candies, nuts, grated or melted chocolate, toppings, etc.;
