Black caviar is one of the most expensive delicacies in the world. The main mass that enters the world market is produced on special farms, but, unfortunately, the share of poaching is not as small as we would like. This caviar is extracted from such types of fish as beluga, sturgeon, northern sturgeon and sterlet. The approximate age of the individual should be at least 10-15 years. On store shelves you can find caviar in glass and tin containers, and there are also products that are sold by weight. Let’s figure out how to store black caviar if you bought too much of it.

Black caviar is quite an expensive product, and it is counterfeited very often. A suspiciously low price can indicate either a fake or a smuggled product. To distinguish real caviar from a fake, you should pay attention to the following:

  • Real caviar never has a plaque, it is perfectly smooth.
  • The real product practically does not smell like fish. Artificial caviar is additionally treated with flavorings, and not always successfully.
  • Caviar should not clump together, each roe is easily separated from the other.
  • The fake product is most often made of gelatin and dissolves instantly in hot water, leaving behind only a little paint.
  • If you carefully look at the egg in the light, you will see the embryo.

This product is quite perishable. The shelf life of black caviar in a jar is no more than 3 months, but after a month it begins to change its taste and smell.

The best place to store black caviar is the coldest place in the refrigerator. In modern units, this is the zero zone of freshness, and in old ones, it is the upper shelf under the freezer. The required temperature is from -2 to + 2 °C.

Attention ! It is strictly forbidden to freeze the black delicacy! At low temperature, eggs burst. When defrosting, you will get a viscous dark substance of an incomprehensible consistency. The minimum temperature that black caviar can withstand is -5 °C. There are models of refrigerators in which you can set such an indicator, then the caviar will be able to lie as long as possible.

It is better to send jars of caviar to the refrigerator as follows:

  • a large amount of ice was frozen;
  • chop it smaller and package it in bags;
  • put the bags in a bowl and put a jar of caviar on top;
  • send the bowl to the coldest place in the refrigerator.

As the ice melts, change the bags to frozen ones. In this way, the caviar will not freeze, the salt added to the product as a preservative will simply prevent this from happening.

The contents of an open tin can or purchased weight caviar must be transferred to a glass container pre-treated with concentrated salted boiling water. To do this, you need to boil a liter of water, add 2-3 tablespoons of salt and cover a clean, dry jar with this solution.

The delicacy packaged in this way is closed with a clean lid, processed in the same way as a jar, or covered with cling film.

Opened caviar can be stored in the refrigerator for a maximum of 36 hours. If you put the jar on ice, then this term is extended to 72 hours.

There is a way to keep it as long as possible. And vegetable oil (preferably olive oil) will help with this. Caviar transferred to a clean jar is poured with odorless oil, tightly closed with a plastic lid or covered with paper soaked in the same oil, and then fixed with a rubber band or rope. Periodically, it is necessary to check the taste and aroma of caviar, if it starts to dry, add vegetable oil and mix gently. This method will extend the life of black caviar up to 4 months.
