Everyone who grows them wants to save peppers for the winter. Bell peppers contain more vitamins C and P than any other vegetable. This is an excellent tool for the prevention of cardiovascular diseases, improving appetite and strengthening immunity. It is possible to store bell pepper at home, but it involves several nuances that you need to know. There are several important nuances of how to store bell peppers at home for a long time.

This vegetable belongs to the subspecies of sweet peppers Capsicum annuum subsp. Grossum, removed at the end of summer, along with most vegetables. Peppers are removed together with the stalk and preferably when they reach technical maturity – only such peppers are subject to longer storage.

The most important thing about pepper storage:

  • Ripe fruits without damage at a temperature of 0-2 ° C and a humidity of 80-90% will be stored for 2-3 months.
  • Bell pepper can be safely stored in the basement or cellar for three months.
  • In the freezer, pepper will stay fresh for six months. You can store it whole, without seeds or cut.

Homemade pepper will be stored longer than store-bought, this should be taken into account when choosing a storage method.

How to store bell pepper

The freshness of vegetables from the market is always in doubt, no seller admits how the pepper was cleaned and stored. Many people are surprised by how much Bulgarian pepper is stored in the warehouses of vegetable stores. Those who need to preserve very large stocks of these vegetables often use a 1% solution of copper sulfate. Having decided to use this method, it is necessary to check the correctness of the preparation of the solution three times. Copper vitriol is poisonous, so pepper processing must be carried out in compliance with safety techniques and doses.

At home, bell pepper can be stored for a long time if the vegetables are not damaged. Therefore, before storing capsicum sweet pepper for a long time, it is necessary to carefully sort the ripe fruits from the unripe ones, as well as separately remove damaged vegetables. Storage conditions for ripe and unripe bell peppers differ significantly.

In the fridge

Ripe fruits should not be left at room temperature – in such conditions they will rot in one day. The most appropriate place for them is the refrigerator.

  • At a temperature of 0-2 °C and a humidity of 80-90%, pepper will last in the refrigerator for up to 3 months.
  • Damaged fruits can be put in the refrigerator for a maximum of two weeks.

Before storing bell peppers in the refrigerator, each fruit is wrapped in paper or several peppers are placed in a sealed plastic bag. You can coat each fruit with vegetable oil so that it stays fresh longer.

Advice ! If it so happened that the fruits began to spoil, you can cut them into pieces and place them in an airtight food container or bag. But even in such conditions, chopped pepper will not be able to be stored for more than 1 week. It is better to use such fruits immediately.

In the basement

The ideal place where it is better to store green pepper is a basement, cellar, storeroom. There should be no sunlight, otherwise the fruits will start to spoil. Unripe peppers, if properly stored, can remain usable for up to 3 months.

If you want it to turn red, the storage temperature should be 10 °C (and higher), humidity – from 90 to 95%. So pepper ripens in 20-30 days. If you need the pepper to ripen faster, you can leave it in the house at room temperature, and then use it as soon as possible.

In the freezer

Many people doubt whether it is possible to store pepper in the freezer. In fact, frozen peppers (chopped or whole for stuffing) will last as long as possible – up to six months. Before sending it to the freezer, it is necessary to remove the core for stuffing or cut it into straws, and then place it in a sealed plastic bag.

It is impossible to defrost pepper twice, so it is better to package it in small portions.

Before storing these vegetables in a dark and cool place, they are placed in wooden or cardboard (with holes) boxes in no more than one row. If you wrap each pepper in paper, the fruits will not touch. Let them be inconvenient to sort through, unrolling each pepper, but they will last much longer this way. You can not rotate the fruits, but fill the boxes with sawdust or sand, laying paper or polyethylene on the bottom of the box.

Another way to keep this representative of the nightshade family longer in the basement, cellar, pantry or on the balcony is to dig it up with the roots and hang it. You can plant them in pots, like house plants. In such conditions, pepper will most likely reach.

How to dry

You can dry bell peppers for the winter using a dryer for vegetables and fruits, an oven or leaving them on the balcony. It is previously cut into strips up to 5 mm wide and laid out on a baking sheet in one layer.

If the air temperature rises to 30 °C, the dried pepper on the balcony will be ready in 3-4 days. Dry bell peppers in an oven or vegetable dryer at a temperature of 50 °C for 10-12 hours. Store dried pepper in jars.

Like dried fruit, it is very fond of insects, so the container should be tightly closed. A jar of dry pepper can be left in a cool, dark and dry place, opening it occasionally.
