Fried mushrooms have always been and will be one of the most favorite snacks. Many types of mushrooms are fried: porcini mushrooms, champignons, white mushrooms, Polish mushrooms, chanterelles, butter mushrooms and others. The finished product is used as a separate dish, and added to stews and salads. They are fried in oil with the addition of onions, sour cream, cream, salt and spices. You can make a spare and freeze, and they can also be left over for dinner or lunch. In the article, we will give recommendations on how much to store fried mushrooms depending on the preparation method.

At room temperature

At room temperature, long-term storage of fried mushrooms, regardless of their type, is not allowed. The exception is a freshly prepared dish that can cool down to a temperature acceptable for transfer to the refrigerator or freezer.

In plates, the finished product can be stored at room temperature for no longer than 2 hours.

In the fridge

The finished dish can be stored in the same plate in which you served it. To do this, it should be covered with cling film. You can also transfer the finished dish to a clean plastic tray and close it tightly with a lid.

The terms of how long to store fried mushrooms in the refrigerator in a closed container are up to 3 days at a temperature not higher than 5 °C.

At the same time, it is recommended to place a plate or other container on the middle shelf closer to the wall so that warm air does not fall on it when the door is opened.

If mushrooms are mixed with potatoes or other garnish, they should be stored for no longer than 24 hours at a temperature of 5 °C in a tightly closed container.

In the freezer

In the freezer, fried mushrooms can be stored for a long time. The recommended temperature is from -18 °C, the lower it is, the better the finished product will retain its nutritional qualities.

The terms of how long you can store fried mushrooms in the freezer are up to 6 months at a temperature of -18 °C and below.

The cooking method also affects the shelf life of fried mushrooms and how they will taste after defrosting. If you have a portion of ready-made fried mushrooms with onions and sour cream left over, you can send them to the freezer in a tightly tied bag, but you should not store them for more than a month.

How to properly fry mushrooms before freezing

If you decide to prepare fried mushrooms for the winter in the freezer, they must be fried properly. Do not add cream and sour cream, as these products lose their taste and organoleptic qualities during freezing. The finished dish can change the taste and consistency. It is also not recommended to fry with onions. This product absolutely does not tolerate frost.

To properly fry mushrooms for freezing, you need:

  1. thoroughly sort and clean the mushrooms;
  2. wash them and let them drain well;
  3. cut into pieces of the required size (small ones can be left whole);
  4. drop into heated vegetable oil;
  5. salt and pepper immediately, as mushrooms, like a sponge, absorb spices;
  6. fry on medium heat until ready (15-30 minutes).

If you are preparing mushrooms for filling, after frying, they should be crushed through a meat grinder. This is the best way to properly preserve mushrooms for the winter for stuffing in dumplings, pancakes or pies. After cooking, cool the finished product, grind it with a blender or on a meat grinder.

Before sending fried mushrooms to the freezer, they must be cooled to room temperature.

For storage, they should be packaged in:

  • plastic bags with a zip fastener;
  • dense polyethylene balls that need to be properly tied;
  • vacuum packaging;
  • disposable plastic cups, which after filling are tightened with cling film;
  • plastic containers with lids.

Try to pack the mushrooms as tightly as possible, to completely squeeze out the air. This will significantly save space in the freezer.

Ready-made fried mushrooms cannot be re-frozen, so they should be packaged in portions for storage in the freezer.

Roasted mushrooms should be defrosted exclusively in the refrigerator on the bottom shelf in the same container in which they were stored, and used to prepare different dishes on the same day. It is absolutely impossible to re-freeze the product.

The finished product can also be ordered in cans in the form of preservation. To do this, it is necessary to carefully sterilize the jars over steam, in the oven or microwave oven. Spread the boiling fried mushrooms in the jars quite tightly, so that there are no voids, and there is at least a few millimeters of oil on top. If there is not enough liquid, you can pour boiling vegetable oil over the mushrooms and immediately roll them up.

After pumping, the cans should be turned over and wrapped in a dense cloth until they cool down. Then take to a place for storage:

  • pantry;
  • glazed balcony or loggia;
  • cellar or cellar.

The storage period is up to 12 months at a temperature of 5 to 20 °C.
